PJ'S Carolina Critter Sauce was originally created to be used as a sauce for pork barbeque.  As friends and family experimented with the sauce, they soon discovered that it was good on just about everything!

Critter Crab Boil
Ingredients:  water, 1/2 bottle Critter Sauce, 1 dozen hard crabs, 1 tablespoon lemon juice, 1 teaspoon garlic powder

In large pot, combine Critter Sauce, lemon juice and garlic powder.  Fill pot 3/4 full with water.  Bring to rolling boil.  Add crabs and cook until crabs are bright red.


PJ's Carolina Barbeque
Ingredients
:  2 lbs. of roasted pork tenderloin, Critter Sauce (to taste)

Chop up tenderloin.  Heat in skillet and add Critter Sauce.

 


PJ's Grilled Tuna
Ingredients:  4 fresh tuna steaks, Critter Sauce, 1/2 teaspoon garlic powder

Combine above ingredients.  Marinate for one hour.  Grill until white and flaky.


PJ's Shrimp and Eggs
Ingredients:  1/2 lb. cleaned fresh shrimp, 4 tablespoons Critter Sauce, 1 dozen eggs, 1/4 chopped onion, 1/2 to 3/4 cup shredded medium cheddar cheese

Stir fry shrimp on medium heat in a non-stick frying pan with 2 tablespoons of Critter Sauce, until shrimp are pink.  Remove shrimp and discard juice.  Chop shrimp into 1/4' pieces, and set aside.

Beat eggs well.  Add 2 tablespoons of Critter Sauce and chopped onion.  Place mixture in frying pan and cook/scramble until eggs begin to thicken.  Add shrimp and cheese.  Cook until eggs are done.  Makes a great breakfast dish for special occasions!  Serves 6-8 people.  Can be adjusted for smaller crowds.


PJ's Shrimp Boil
Ingredients:  1 lb. fresh shrimp, 1/2 bottle Critter Sauce

Cover shrimp with Critter Sauce and water.  Cook until shrimp are pink.


PJ'S Beans and Rice
Ingredients:  1 cup dry kidney beans,  1 cup dry pinto beans, 1 cup dry black beans, 1/2 cup Critter Sauce, 1 diced green pepper, 1 diced medium onion, 1/4 teaspoon oregano, 1/4 teaspoon garlic powder, 2 cups long grained brown rice, water

Soak dry beans 8 hours, or overnight.  Rinse.  In a big pot, add beans, Critter Sauce, green pepper, and onion.  Cover with water (to approximately1 inch over the beans) and cook 2 hours, or until beans are tender.
Cook rice according to directions on package.  Add rice to beans and season with oregano and garlic.  For extra spice, add Critter Sauce to taste.


PJ'S Tender Roast
Ingredients:  Your favorite cut of beef/venison, 1 large sliced onion, garlic powder to taste, salt, pepper, Critter Sauce

Season meat with salt, pepper and garlic powder to taste.  Brown on all sides.  Add 3/4 part water and 1/4 part Critter Sauce.  Add onion.  Cook in pressure cooker for 1 hour (or cook in your favorite roaster until done).


Critter Chicken
Ingredients:   1 whole chicken (cut up),  package dry ranch dressing mix, 1 bottle Critter Sauce, 1/4 cup honey

Combine honey, dressing mix, and Critter Sauce in large bowl.  Add chicken.  Marinate for 1 hour.  If you like it hot, marinate for 2 hours!  Cook chicken as you like (microwave, bake, or grill).


PJ'S Cheese ball
Ingredients:  1 1/2 lb. medium cheddar cheese (grated), 8 oz. cream cheese, 1/4 teaspoon garlic powder, 1 tablespoon chives, 2 1/2 tablespoons Critter Sauce, 3/4 cup chopped nuts

Combine cheddar cheese, cream cheese, garlic powder, chives, and Critter Sauce.  Mash together until well blended.  Form into a ball, and roll in chopped nuts.


PJ'S Tuna Dip
Ingredients:  16oz sour cream, 2 tablespoons Critter Sauce, 1 package Hidden Valley Ranch Dip mix, 1 cup canned tuna (or 1/4 lb. fresh grilled tuna, flaked)

Grill fresh tuna (brush with Critter Sauce while grilling).  Mix above ingredients.  Chill for one hour.  Serve with crackers and/or vegetables.


PJ'S Meatloaf
Ingredients:  1 lb. ground beef, 20 Ritz crackers, 1 small onion (diced), 1 small green pepper (diced), 1 egg, 1 teaspoon mustard, 2 pinches garlic, 2 pinches oregano, 3 tablespoons Critter Sauce, 1 cup ketchup

In large bowl, mix all ingredients except ketchup.  Add 1/2 cup ketchup.  Mash together into loaf.  Place on broiler pan treated with non-stick spray.  Bake at 350 degrees for 30 minutes.  Spread remaining 1/2 cup ketchup over top of loaf.  Cook 30 more minutes.


Critter Onion Burgers
Ingredients:  1 lb. lean ground beef, 1/2 package dried onion soup mix, 1 1/2 teaspoons Critter Sauce

Combine all ingredients and shape into burgers.  Grill until done.  Yum!



PJ'S Bloody Mary
Ingredients:  46 oz. can tomato juice, 4 oz. Critter Sauce, celery stalks, vodka to "taste"

Mix Critter Sauce with tomato juice.  Pour over ice and add vodka to taste.  Add a celery stalk.  Enjoy!
